Well…this is embarrassing.

I try.  I really do.  But somehow the art of consistent blogging has just gotten away from me.  Oh I remember the good ol’ days when I was blogging 3 or more times a week.  Looking back, I can see I’m averaging once a month at best.  So, so sad.
So, I want to start where I need to which is back at the beginning of twenty-sixteen (hiding face in shame).  Yes, I was remiss in sharing this STUNNING mother to be and her snowy maternity portraits back from January 2016.  I’ve since since this little baby turn into such a beautiful little girl.  I can’t wait to see them again this summer for family portraits on the beach.  I’ll be there tomorrow for another maternity session kicking off my 2017 beach sessions.  It’ll be over 90 degrees so I’m wondering if I can talk mom into getting into the water with me…

Stay tuned!

xoxo

April 1st marked a very important day for me.  10 years ago I started this business and really had no idea what an incredible journey this would be.  Along the way I have met some amazing people.

Those who have trusted and believed in me from the very beginning.  There were times I doubted myself, my talent, my abilities to keep pushing forward but with each new session I am reminded that I have been

given this gift not for something I can physically take away but that which I can give to others–memories that will truly be cherished for a lifetime, no matter how cliche it might sound.

With each new year comes motivation to take my creativity and passion to the next level.  I am so excited for what 2017 has in store and I cannot wait to be a part of capturing these precious moments

for you and your family for the first time or once again.

To celebrate, I am offering some pretty sweet deals.  If you missed my newsletter that went out on Friday be sure to Subscribe for these very special offers.  As always, newsletter subscribers

are always the first to receive these notifications.  All new opt-ins between Monday April 4th and April 15th will receive this month’s special newsletter.  Session specials expire on April 15th so be sure to check ’em out before it’s too late!

Where does the time go?  Ladies, doesn’t it seem that while you watch somebody else’s pregnancy that it goes by in the blink of an eye meanwhile your own pregnancy seemed to go on for 40 years and not 40 weeks?  And your own children growing up so fast yet some moments or phases seem to never end.  They say the days are long but the years are short and I’m really truly now getting to realize just how true this is.

I was lucky to have my beautiful niece come for a milk bath session last month.  She just turned one on March 9th and I cannot believe a year has passed since the day I got to hold her in my arms at the hospital.  Happy Birthday Ms. Vivien!

Ingredients
  1. 10 cups chicken broth
  2. 3 cups cooked chicken breast, diced or shredded
  3. 1 large carrot, diced
  4. 1 vidalia onion, diced
  5. 1 large celery stalk, diced (reserve celery leaves and chop)
  6. 4 cloves of garlic, minced
  7. 1 lemon, zested and cut into 5-6 thick wheels
  8. 1/4 tsp. crushed red pepper
  9. 1 cup Israeli couscous
  10. 1/4 cup chopped parsley
  11. 1/4 cup chopped chives
  12. 12 mint leaves minced
  13. 3 Tbsp. feta
  14. Salt & Pepper
Instructions
  1. Add 2 tablespoons of extra virgin olive oil to warm 8 qt. sauce pan. Add the carrots, celery and onion and cook over medium low heat until onion is translucent. Add garlic, crushed red pepper lemon zest, some salt and pepper and cook slow and low for roughly 5 minutes. Add chopped chicken, stir to coat and cook for 2-3 minutes until chicken gets lightly browned. Add chicken broth and bring to a boil. Once boiling add the couscous and bring to a simmer. Continue simmering about 8 minutes until couscous is al dente. Turn heat off, add lemon slices parsley, chives, mint, celery leaves and feta. Let it sit for roughly 10 minutes and serve warm.
Notes
  1. First time I made this I used a rotisserie chicken. I have since used chicken breast cooked in the Instant Pot. Use chicken any way is easiest for you!
  2. When storing, remove lemon wheels otherwise leftover soup will be too lemony.
  3. Instead of incorporating feta into the whole pot you could serve it crumbled on top of individual soup bowls for more of a taste impact.
