Remember when I said I was going to feature food related posts on the blog?  And then I do but then it’s months before I do it again?  I’d like to get better at that.  It’s really something I love; cooking, eating, sharing, pouring over recipes, getting lost on Pinterest just salivating over all the goodness that’s out there.  Problem I find is that when I’m cooking dinner in the winter, it’s dark and I can’t photograph the end result!  During the summer, I’m too busy to be blogging anything other then directly client related.  No time for personal endeavors, sadly.  But I decided to whip this up for lunch the other day and with that I was able to photograph the meal with beautiful natural light.  There was a lot of interest for the recipe so here it is!  Enjoy!

Spaghetti {Squash} and "Meatballs"
Serves 4
Spaghetti Squash and Eggplant Meatballs

Ingredients
  1. 1 Spaghetti Squash
  2. 2 Cups Spaghetti Sauce (your own or I use Rao's if not making it homemade)
  3. +++++++
  4. 1 Large Eggplant
  5. 1 cup freshly ground romano cheese
  6. 3/4 cup panko or plain breadcrumbs
  7. 1/2 cup rinsed cannelini beans
  8. 1/2 cup freshly chopped parsley
  9. 1 tsp onion powder
  10. S&P
Instructions
  1. Preheat oven to 400. When it's to temperature, cook the eggplant for about 30 minutes or until it softens completely. You can either cook it whole--just on the rack-- or slice it in half, drizzle with olive oil and bake on a sheet pan.
  2. While the eggplant is baking, cook your spaghetti squash. There are many methods of doing this, however I find the simplest way is to pierce the squash a dozen times and microwave it for about 7 minutes, flip it and then microwave for another 7 minutes. Let it cool, slice in half and scoop out seeds. Use a fork to get all of the strands out. Set aside.
  3. When eggplant is finished, scoop out all of the flesh and discard the skin. Give it a squeeze to get out any excess water. If you do this a day ahead like I did, you can store it in the fridge overnight with some paper towels which will soak up some of the eggplant liquid.
  4. Pulse the eggplant in a food processor. Add the parsley, cheese, beans, onion powder, and S&P until combined. Add the breadcrumbs bit by bit until you have a nice consistency where the balls will keep their shape.
  5. Roll them into golf sized balls. You'll get about 16 or so.
  6. Bake or fry them--whichever you feel like doing. Watching calories? Bake them at 350 on cookie sheet with tin foil. Give the foil a mist of cooking spray so they don't stick! Takes about 20 minutes until cooked through and golden brown. Want the flavor? Fry them up in olive oil until they are golden and cooked through.
  7. Mix your spaghetti squash with your tomato sauce. Add the eggplant meatballs. Sprinkle some shaved Romano or Parmesan on top. Enjoy!
Notes
  1. Next time I might add some ricotta to the meatball mixture.
  2. If you wanna get fancy you could always saute up the spaghetti squash with some oil and garlic first for some extra flavor.
  3. I grew up with Romano cheese but if Parmesan is your thang, then use that instead.

Just a few weeks before she was due, we set out to capture this beautiful and very talented hair & makeup artist’s snowy maternity portraits on the lake near my home.  We were racing against time both literally and figuratively.  The sun was setting quickly and traffic held them up a bit.  I was afraid we’d lose light before we could even start shooting.  However, they made it just in time!  It was so cold anyway that the 20 minutes we had to shoot was long enough being out in the wind and frigid temps.  Luckily, scheduling was in our favor.  Winter storm Juno rolled in the very next day….and Caitlin went into labor!  I guess little Scarlett Rose didn’t want to miss out on Boston’s historic storm.

PS: Does she remind you of anyone???  I didn’t put it together until somebody mentioned it on FB, but if you have little ones at home and have watched Frozen, then you know who I’m talking about 😉

Another snow day here in New England.  This is number five just in the past 15 days for our schools.  I think even the kids are getting a little tired of it all.  Our house should be completely buried by the end of the month 😉

I have to say that despite not knowing if people are reading my blog at all anymore, it really feels good to get back here and write.  It has also given me a chance to go back and look at old sessions yet to be blogged with new eyes.  I decided I wanted to try these images of this beautiful little dancer in B&W.  I’m always looking for the right black and white, there are so many styles to choose from.  Being the fickle girl I am, I’ll say for now these work for me.

It’s been snowing.

A lot.

We are in “historic” territory now when they speak of just how much snow we’ve gotten in the past couple of weeks and I kid you not when I tell you that we are in for maybe up to 2 more feet within the next week.  This leaves me sort of verklempt–I am not a skier nor do I really care for it unless it’s going to be a White Christmas–which we did not have, not even close (can you say 50 degrees?).  Anyway, I shall use this time to just go back to warm, summer images.  Let the thawing begin now.

Meet Caroline & Kate.  The cutest twins you ever did meet.  I’m reaching back now, waaaaay back to late summer of 2013.  I thought I was caught up but I still have many pretty sessions to share.  I had a gorgeous session with them this fall but that will have to wait….for now.  Enjoy!

Olivia decided she was ready to meet her parents 12 weeks early.  I guess she just couldn’t wait to meet the world.  I wonder if this eagerness will play out in her personality as she gets older?  An undeniable voracity for living life to the fullest?  A desire to be the first of many firsts? 

14 weeks –or two weeks old adjusted age–at the time of our shoot and still just a little peanut.  In contrast to this tiny, beautiful baby the love that emanated from mom and dad was great and palpable.  Despite some belly issues she did wonderfully throughout our session.  Personally, I love awake shots during newborn sessions and with eyes as big, blue and bright as Olivia’s, it would be such a shame to only have those squishy sleeping shots.  Don’t you agree?

    Robert Austin Fitch - Wow, what an absolutely gorgeous series of baby photos! Love them all but the 7th shot down, of the family where the dad is resting his nose on the moms forehead and the baby is nestled in-between them is beyond beautiful! Simply outstanding work!
